Fire-Roasted Cherry Tomato Salsa

At the end of the recipe you see the direction to let the salsa cool for a few hours and THEN adjust the seasoning.  This is a good idea when making any salsa or cold dip or sauce.  The flavors will change over time as the ingredients meld together (that’s why chili always tastes better the 2nd day!)

Perceived seasoning will also change with temperature.  Especially perceived salty-ness. So make sure you adjust the seasoning when the salsa or sauce is at the temperature you will be serving it.  This salsa can be enjoyed cold (with chips or crackers) or warm (with taco, quesadillas or the delicious Pork Carnitas Recipe we have a link to below the recipe.) So, adjust the seasonings according.

Fire-Roasted Cherry Tomato Salsa Recipe

Ingredients (Taken from the Video)

Makes about 2 cups of salsa

  • 1 pint Cherry Tomatoes (Sweet 100’s, if you can find them)
  • 2 teaspoons Extra Virgin Olive Oil
  • 1 medium Yellow Onion, coursely chopped
  • 8 cloves Garlic, unpeeled, left whole
  • 3 Jalapeños, sliced, ribbed and seeded
  • Juice of 1 lime, to taste
  • Salt and freshly ground Black Pepper, to taste
  • Cayenne, to taste
  • 1/8 teaspoon dried Oregano
  • 1/4 teaspoon dried Cumin
  • 1/3 cup fresh Cilantro Leaves, packed

Directions (Taken from the Video)

  1. Preheat oven on broiler setting.
  2. Rinse cherry tomatoes and drain well.
  3. Line a baking sheet with foil and drizzle with olive oil.
  4. Pour tomatoes on baking sheet.
  5. Add onion, garlic and jalapeños.
  6. Place pan in oven (see video for a trick for this step to get the tomatoes closer to the heat.)
  7. Broil under high heat until well-charred.  Check after 5 minutes. Turn the pan and char for another 5 minutes or so. (See the video for the look of perfectly charred vegetable you are going for here.) Set aside to cool.
  8. When cool, peel the garlic.
  9. Place everything into a blender and pour in the juice from the pan.
  10. Add lime juice, salt and pepper, cayenne, oregano, cumin and cilantro.
  11. Blend on medium high, using pulses.  Scrape sides and blend until done.
  12. Cool for a few hours. When cooled, taste and adjust seasonings.
